We raise Cornish Cross broilers (without antibiotics or hormones) that range in weight from 4-6 pounds. In addition to pasture grazing, our chickens are fed local, non-GMO grain from Easton, NY.
This year we will be trialing a variety of chickens the breeder claims are large breasted like the Cornish Cross yet capable of producing young true to the parents. This trait is unlike any "meat" chicken available, including "ranger" types, as these varieties are cross bred and will not produce true to parents. I will evaluate the meat qualities as well as the viability of the offspring this summer.
We take great pride in our homestead and want you to get the most out of your chicken. Our goal is to minimize waste and to use as much as possible. The following is how we use our birds.
· Typically we roast or braise the whole bird or cut quarters for the initial meal.
· Any leftover meat is then removed from the bones and used as chicken salad, pot pie or soup.
· The remaining bones and neck are then used to create as much as a gallon of broth or stock. We use this stock for many things from a hearty soup or stew to cooking rice. It is nutrient dense and better than anything you can buy in the store.
